In the heart of Canelli, a town celebrated as the birthplace and capital of Italian sparkling wine, lies Coppo – a winery with 130 years of history inextricably linked to the evolution of Piedmont's winemaking culture and Alta Langa in particular.
Alta Langa
DOCG is a relatively young appellation, officially recognized in 2002, yet it
has rapidly gained prestige among wine enthusiasts. Known for its metodo
classico sparkling wines, this exclusive designation is reserved for wines
produced from vineyards located at high altitudes, between 250 and 600 meters
above sea level, in southern Piedmont. With only a handful of producers
championing the appellation, Coppo is
recognized as one of its earliest and most fervent believers, boasting over 14
active vintages. Their ongoing commitment has helped shape the growing
reputation of Alta Langa as a source of refined and complex sparkling wines.

the dedication that Coppo has brought to metodo classico winemaking.
Crafted from 100% Pinot Noir grapes from vineyards
situated at altitudes between 270 and 450 meters, on the right bank of the
River Tanaro in southern Piedmont, this metodo classico sparkling showcases the
region’s unique soil – a mixture of clayey marl and chalky rocks of marine
sedimentary origin.
After a
meticulous hand-harvesting process, the grapes undergo a gentle pressing,
followed by fermentation in stainless steel tanks at controlled temperatures.
The wine then undergoes malolactic fermentation, before aging on its lees for
30 months. This traditional method of bottle fermentation creates a delightful,
fine perlage that dances in the glass.
With its
golden straw-yellow hue and subtle greenish reflections, Luigi Coppo Pas Dosé
entices with a fresh bouquet of bread and yeast notes, complemented by vibrant
fruit sensations. On the palate, it is vigorous and vertical, offering a
powerful yet elegant tasting experience.
Best served
chilled at 6-8°C, this sparkling wine is the perfect companion for aperitifs,
cured meats, or fried seafood dishes.
