The Flavors of the Feast: Piedmont Tradition on the Table

In Piedmont, the feast is not announced with fireworks, but with the aroma coming out of the kitchen. On feast days, dishes are not just food: they are stories to be told, emotions to be relived, roots to be rediscovered. And every time the Bollito, Fritto Misto or Bagna Cauda is brought to the table, an ancient ritual is celebrated that smacks of family, tradition, and above all, love. Unique, generous dishes, born to be shared, passed down from generation to generation, and served at times when family and friends get together.


From the ritual of Bollito: seven cuts of beef, slowly cooked together with capon, head, cotechino and tongue, immersed in a broth flavored with vegetables and spices. At the table, each piece finds its ideal pairing: green sauce, mustard, red bagnetto, or classic coarse salt. It is served at Sunday lunches in winter or on big occasions, when the table is long and the company large.
